Mennonite Monday - Chicken Taco Pie

Mennonite Monday started because I wanted to make recipes from the Bethesda Mennonite Church Cookbooks (both the yellow and the white cookbook for those of you who own them). I also wanted to take pictures of each recipe that I made, so I would know for future reference what the recipe should look like. I am by no means a great cook, but I think it will be fun to try new and different recipes each week. Not all of these recipes are for ethnic Mennonite food, but the women from Henderson know how to cook, so I can safely say that these recipes will be good. Check back each Monday for a new recipe and feel free to leave a comment if you have a favorite recipe from these cookbooks, or if you have some tips on what I should make and how I should make it.

The winning recipe from this week is Chicken Taco Pie, which is found on page 151 of the white church cookbook.

Chicken Taco Pie
2 to 3 lbs chicken
10 oz. can enchilada sauce
1 can cream of mushroom soup
1 cup grated cheese
1/2 tsp garlic salt
1 large onion
11 oz pkg corn chips
1 cup chicken broth.

Boil chicken till tender; save broth. Debone and cut chicken in bite-size pieces. Combine chicken, enchilada sauce, soup, onion, salt and pepper. Line a greased baking dish with corn chips. Add chicken mixture, sprinkle with cheese and cover with corn chips. Pour 1 cup chicken broth over entire mixture. Bake at 350 degrees for 30 minutes. Serves 8.


I did not use 11 oz. of corn chips, which is what it says in the ingredients. I'm not sure if I should have used more chips, but I just did one layer on the bottom and top.

I purchased my ingredients before I fully read the recipe, so I planned to bake the chicken in stead of boiling it. I had also bough a can of chicken broth, so I didn't need to boil the chicken for that reason. For cooking the chicken I set the oven at 450 degrees. After 7 minutes I flipped the chicken and after 7 more minutes I checked the internal temperature. Since it was over 160 degrees I knew the chicken was done.

I cut the chicken into bite size pieces.

Mixed all the ingredients together and poured it over the chips.

Covered it with cheese and chips.

Poured on the chicken broth and put it in the oven.

This is the final product.


We ate this with sour cream and salsa, which was good.
One thing I noticed was that the onion was still a little crunchy, so I would recommend chopping the onion very finely.

  1. Dan and I recently decided to bake/roast a whole chicken for the first time for both of us...it tasted good, but next time we will know to leave it in for just a little bit longer! We also decided to make our own chicken broth with the remains. Well, it was mainly Dan who did it, but it turned out awesome! It's exciting to see how much you can get out of a $4 chicken!
